Is Newer always Better?

When we contracted GPS Range Services to carry out the overhaul of the frying range, I was concerned that the ‘improvements’ could cause problems….

 

You see, the frying range is an important part of the cooking process. Yes, we use the finest quality cooking medium, we use the best tasting fish we can buy, and we use crispy batter made to our own recipe – but the frying range itself adds to the overall result – the food. I was concerned that the new parts would alter the taste of the food, that there would be a loss in flavour from the shiny, new parts.

 

After a week of having the new pans in place, I am happy to announce that the change is for the better! the batter seems to be crispier, and the fish still tastes as good as ever. In this instance, Newer IS Better!

 

There is, however, one area which has been a concern – due to the way the heat is delivered to the pans, there are ‘hot spots’ in each pan. Over time these will not be as intense, but for now they have caused one problem – if the food (mainly Fishcakes) sit on the bottom of the pan for too long, they can have spots where they are cooked more than others! To solve this, for the time being, I have started to cook the cakes in baskets, ensuring they do not touch the floor of the pan, and maintain an all-over even colour.
